carrot coconut salad

Ingredients:

2 carrots, grated

1 cup shredded coconut

1 cup raisins

 

Method:

This is simple: combine all ingredients together.

Serve with a squeeze of lime, lemon or orange juice if needed.

Serves 2-4 people

 

Mum used to make this every Friday (BBQ night) when we used to live on Bougainville Island, Papua New Guinea.
