Viva La Vegan!

choc chip cupcakes

Ingredients:

2 cups self raising flour

1/2 cup caster sugar

100g Nuttelex margarine, or another vegan margarine

1/2 cup (brown) rice milk

1/2 cup vegan dark chocolate chips

 

Method:

Sift flour, combine with sugar, rice milk and melted margarine

Mix well until thoroughly combined

Add chocolate chips and mix to combine

Spoon mixture into cupcake wrappers

Cook in a medium oven for 30-40 minutes until skewer comes out clean

 

Makes approximately 18 cupcakes
