citrus coriander pasta salad

Ingredients:

1/2 of a 350g packet of Berconia brown rice macaroni, cooked

1/3 cup Coconut Milk

1/4 cup coriander/cilantro

1 tbsp coconut oil, melted

1 tbsp lemon rind

1 tbsp lime rind

1/4 cup lemon juice

1/4 cup lime juice

Salt and cracked black pepper - to taste

 

Method:

Add all ingredients into a bowl except the cooked macaroni.

Add the pasta into the bowl

You may also want to add: spring onion, other herbs, or other spices.

 

Serve cold.
