colourful vege stirfry


1/4 pumpkin, diced

6-8 tomatoes, diced

1/2 cup beans, cut in thirds

1/4 cup spinach, chopped in food processor



Cracked black pepper

Coconut oil



In a heated, oiled wok, stir-fry pumpkin, and beans

Heat through then add tomatoes, pepper and herbs

Stir-fry until tender

Serve as a salad or as a main meal combined with cooked gnocchi or grain

Serves 4-6 people
