polenta health slice

Ingredients:

1 cup polenta (cornmeal / semolina)

2 cups of soy milk

2 tablespoons of malt extract

1 cup of chopped dates

1 cup of chopped dried mixed fruit

½ cup of LSA (linseed, sunflower, almond) mix

Wheat germ to sprinkle on top

 

Method:

Mix the polenta with one cup of soy milk and malt extract in a microwave-able container.

Cook in 30 second successions, mixing each time after 1 minute.

Add the remaining cup of soy milk, a bit at a time, keep on stirring and cooking in 30 second blocks.

Finish when there is no more liquid and the mixture seems to have expanded.

Mix in the fruit, dates and LSA mix.

Add an extra bit of soy milk if not mixing together properly.

Pat down the mixture onto a small tin with greaseproof paper.

Sprinkle a thin layer of wheat germ on top, pat down and refrigerate.

 

Cut into squares when cooled and serve

Can also be served heated

 

Serves 4 - 6 people
