Pasta…..everyone loves pasta, right? But for most, it is considered the evil of all things weight loss and health. But it doesn’t have to be. There is a way, a healthy way to enjoy a hearty, nutritious and delicious vegan pasta dinner. There is a pasta and a recipe for healthy vegan living. Introducing soba noodles?
What are soba noodles? Soba noodles have been around for centuries and when the hunger for pasta strikes and a recipe for healthy vegan living is in demand they deliver on all points of taste, texture and nutrition unlike may so called “healthy pastas” on the market.
But what makes soba noodles so special?
Buckwheat, not related to and the main ingredient of soba noodles, is a primitive grain that is rarely eaten in the United States today. However, buckwheat is the best source of crucial elements that are vital to the healthy functioning of cells (the very components of the body) and beneficial enzymes that ensure immune health.
But there is even more to buckwheat. It is uniquely rich in proteins and the essential amino acid lysine which are lacking in most modern cereal grains. Buckwheat is also abundant in lipids, minerals that include iron, magnesium, phosphorus and copper and vitaminsB1 and B2.
And if that was not enough, buckwheat is very high in rutin which is an essential nutrient that is not found in any other grains, such as rice and wheat, or even beans. Why does rutin matter? It increases capillary strength thus improving high blood pressure.
Choline, is yet another important micro-nutrient found in buckwheat that regulates blood pressure and liver function.
And when buckwheat becomes soba noodles, a centuries old staple in Japanese culture, it is proven helpful in reducing cholesterol and stimulates the intestines to promote bowel movement.
And, the regular consumption of high protein soba also aids with reduction in body fat.
So, there are abundant reasons why soba noodles should be included in a vegan lifestyle. And when they become the key ingredient in a recipe for healthy vegan living, they will tantalize the tastes buds and fulfill many of the body’s nutritional needs at the same time.
And speaking of recipes, here is a recipe for healthy vegan living that is certain to please…
Soba Noodle Salad
- 1 package soba/buckwheat noodles
- drizzle of untoasted sesame oil
- 8 snow peas
- 1 small carrot
- ½ red chili
- 1 tbsp toasted black and white sesame seeds
- shoyu soy sauce
Cook the noodles until tender, drain well, then toss with a drizzle sesame oil.
Finely slice the snow peas, cut the carrot into matchsticks and deseed and slice the red chili.
Toss the veggies with the noodles and toasted sesame seeds. Season with a drizzle of shoyu soy sauce.
The simple truth is, soba noodles are an awesome ingredient in a recipe for healthy vegan living that will do the body good. Time to go shopping and then make dinner! Bon appétit!
