Apricot_Balls 

Ingredients:

320g (11oz) Vegan Condensed Milk - I used Sweetened Condensed Coconut Milk (buy it at your local Asian supermarket)

205g Leda Arrowroot Biscuits

1 cup of Apricots - cut up

1 cup Desiccated coconut + more

 

Method:

In a food processor, process all the biscuits until fine

In a bowl, combine crushed biscuits, condensed milk, apricots, and desiccated coconut

If the mixture is too runny, add more coconut (also hemp seeds)

Roll mixture into balls and coconut - should make about 24 balls

 

Refrigerate for about 1 hour before serving
